Larkin Square is extending its Food Truck Tuesdays, welcoming popular Rochester food trucks back to the unparalleled collection of street food options the event represents.

Larkin’s Tuesday night food truck events will be extended through tomorrow night and Oct. 1, said Larkin’s Leslie Zemsky. Past Tuesdays have seen about 20 food trucks and carts at the event, she said. That collection of eats options, all in one spot, rivals major festivals and fairs.

The regular contingent of Buffalo trucks at the 5 p.m. event (745 Seneca St., 362-2665, larkinsquare.com) has been joined by Rochester standouts Brick N MotorHello ArepaThe Meatball Truck, and new this week: Macarollin.

* Merge (439 Delaware Ave., 842-0600, mergebuffalo.com), one of Buffalo’s standouts in organic vegetarian cuisine, is helping raise money for an organic farming group on Sept. 28.

That night, 15 percent of the restaurant’s revenue will be donated to the Northeast Organic Farming Association of New York (NOFA-NY). It’s part of the organization’s Locavore Challenge, a monthlong series of events designed to “inspire awareness and action in eating locally and organically through events and activities held around the state and online.” Learn more at nofany.org.

* Essex Street Pub will start serving a dinner menu of Bavarian classics, plus the revamped bar’s extensive burger and smoker-centric tavern menu, owner James “Macky” Moberly said.

Plates on the Bavarian menu are $12, and they’re scheduled to run Sept. 27 through Oct. 11. They include jagerschnitzel, breaded pork cutlets fried to order, with a rich mushroom gravy; Bavarian goulash, a German beef, onion and red wine stew; smoked Spar’s German bratwursts, from Spar’s European Sausage. Plates include warm German potato salad, cold cucumber salad, sauerkraut and bread.

* Delhi Chaat (3545 Sheridan Drive, Amherst, 837-3038, delhichaatny.com) has reopened after renovations, owner Bobby Varun said.

 * Closed recently: Sonoma Grille, Main Street, Amherst; Hyde Park Prime Steakhouse, Galleria Mall, Cheektowaga. Zonies, the calzone delivery specialist, has closed its Eggert Road, Amherst location. Phone calls to other locations went unreturned.

Buffalo, NY: Food Truck Tuesday at Larkin Sq Extended

BUFFALO, N.Y. (WIVB) – Food Truck Tuesdays at Larkin Square are proving to be so popular, organizers have decided to extend the event through the fall.

On Tuesday, Larkinville had food trucks from Buffalo and Rochester serving up tasty options.

Leslie Zemsky, Director of Fun, said, “Buffalo [is] beautiful [in the fall], and we thought as long as people keep coming, and the trucks keep coming, we’ll keep going. So we’re playing it by ear, week to week, but we know we’ll be here at least two more weeks.”

Around 20 trucks and carts were coming to Larkinville each Tuesday, and that was before Rochester vendors were invited to join in.

Food Truck Tuesdays will continue at least through October 1, but may be extended further than that.

Buffalo, NY: The Front Yard Turns on Forever! Oct 18, 2013

Come and join us this Friday night (October 18, 2013) and celebrate the new permanent, outdoor installation at the Burchfield Penny Art Gallery (1300 Elmwood Ave).  This installation is the first of it’s kind in the world, so there is no excuse NOT to come to the party!

There is going to be food trucks (US and a couple of those other guys) and a live musical performance by DME (led by Tomás Henriques).  Then at sunset the three projection towers will turn on forever.  This new installation is transforming the Gallery’s facade into a 24/7/365 media gallery!

This is the “worlds first permanent environmentally-responsive, outdoor audio and video environment” and will feature works by project co-designer Brian Milbrand, Steina, Barbara Lattanzi, Meg Knowles & Chris Gallant.

SOUTH BUFFALO – After a full season of fun and festivities at the Larkin Square the Holiday Live at Larkin event brought the outdoor concert and event season to a close on Dec 6.

Holiday Live at Larkin featured the unique song stylings of Robot Holiday, and a portion of the proceeds benefited the WNY Food Bank. Despite the colds temps and brisk winds the holiday party was attended to by hundreds of people from all over Western New York.

“We heard about it and we thought it would be a great time so we came down,” stated Pat Gorman from North Tonawanda. He wasn’t the only one. The events that were initially accommodated by local street parking have found the need to advance to the nearby parking lots to provide space for all event-goers that now frequent the Larkin Square events.

One of the reasons for the increased crowds may be the recent addition of the food trucks to the events that already feature live music, a themed marketplace and a fun, relaxed setting.

“I had to come over and try the pulled pork sandwich,” stated one hungry attendee who admitted that his friends were in the indoor heated tent raving about the food from the Whole Hog food truck. Hot off the Press, the Black Market and the Roaming Buffalo were also in food truck attendance for the event.

“This is our first year in business and it’s going great,” stated Brenden Haggerty, owner and idea man behind the Whole Hog Food Truck, whose menu features everything from fresh pulled pork and homemade macaroni and cheese, to features such as a deep green salad with roasted acorn squash and a balsamic dressing. Not the kind of food you would expect to get from a truck.

The Buffalo food trucks that have grown in popularity in the last two seasons are now regular inhabitants of the Larkin Square on Tuesday evenings throughout the warmer months. The trucks also make appearances during the Wednesday night Live at Larkin concert event series, serving everything from fresh Thai food to steaming Panini sandwiches. Although the season may have ended, they are already scheduled to be back up and running for a new season on June 14 when Larkin will kick off another season of fun and festivities.

If you can’t wait that long to visit Larkin Square you may not have to. Watch Larkin’s website at www.larkinsquare.com where you will find information on any spring happenings that get planned prior to their regular outdoor season.

Buffalo food truck aficionados can still visit their favorite food trucks while their seasons wind down by keeping tabs on truck locations at www.buffalofoodtrucks.com. Many of the trucks are also available to cater your next event.

Larkinville will be continuing their activities in the warmth of the indoor Filling Station with their author series in January. Kathleen McCleary is scheduled to appear on Jan 13 and Buffalo’s own Charity Vogel scheduled for Jan 22 when she will discuss her book, “The Angola Horror”.

Despite the cold weather, there is always something happening at the Larkin Square and Filling Station.

Buffalo, NY: Buffalo Getting a Polish Food Truck

Hang onto your gotchies: Buffalo is getting a Polish food truck.

The truck, dubbed Betty Crockski, will roll out in March and officially launch April 21, Dyngus Day.

Owned by Buffalo natives and lifelong amateur cooks Kate Hey and Dana Szczepaniak, the truck will feature a core menu of homemade pierogi and kielbasa.

“We’re doing riffs on very traditional Polish flavor combinations,” Szczepaniak said. “We’ll have a kielbasa that’s our house recipe and a core menu of pierogi that are kind of traditional pierogi reinvented.”

The truck also will feature daily specials of different pierogi flavors and other Polish foods.

The menu will not be finalized until the pair returns from an inspirational trip to Poland at the end of the month, but pierogi flavors such as grilled plum and sauerkraut as well as chicken and wild mushroom with sauce vin blanc are in the works.

Both owners left professional careers a month ago to pursue Betty Crockski full time. Szczepaniak, who has prepared traditional Polish foods with her family for years, left her job as a certified public accountant in New York City, while Hey, whose family of restaurateurs owned Carl Meyer’s Hof on Court Street until 1982, put her skills as a local marketing freelancer to work for the venture.

Buffalo, NY: Food Truck Tuesday’s At Larkin Square Return In May!

Food Truck Tuesday is a phenomenon that is in major metropolitan cities such as Phoenix, Austin, and San Diego. Did you know that Buffalo has a FDTuesday as well? It does, the tradition here started last May, and is now a highly anticipated event. During the rest of Spring, and throughout the Summer most of Buffalo’s Food Trucks will be located over in the Larkin Square area of the city. If you haven’t had the chance to get down there yet, I suggest you do. It has a refurbished gas station that provides lunch daily from 11-3, The Larkin Filling Station. It also hosts Live at Larkin Wednesday concerts and the Larkin Square Author Series. But the Food Truck Tuesday is becoming a big event in the area, and should exceed expectations this upcoming year.

There are over 15 Food Trucks in the Western New York area, just five years ago there were none!

The FT phenomenon has swept over Western New York primarily because we love food here! The choices range from an Upscale Taco Truck (Llyod’s), Polish Fare (Betty Crocksi), Mini Gourmet Burgers (Knight Slider), and BBQ (Whole Hog) to die for! I sampled quite a few last year, and seriously was impressed with the fare. Tuesdays will include live music, wine and beer at the grill cart, and will feature lots of those Food Trucks. Here are some of those trucks, see the whole list at the bottom!

  • Llyod’s Taco Truck - Is Buffalo’s first official Food Truck! Their mission is to bring legitimate street food toBuffalo by offering affordable yet incredibly tasty takes on tacos and burritos. They use meat that is antibiotics or hormones free, the way nature intended.

  • Betty Crocksi - Started by two of coolest girls I know, this is authentic Polish cuisine! Buffalo has a very large Polish community here, and we love our Perogi’s. These girls use traditional flavors and modern techniques to create new Polish soul food.

  • The Whole Hog - The Whole Hog is about supporting local agriculture. They use meat  from a heritage farm where the animals are raised humanely and humanely slaughtered. They also supports local farms by purchasing seasonal greens, vegetables and fruits.
  • Amy’s Truck – Named after the iconic Buffalo restaurant Amy’s Place! This truck is run by former cook Amanda Amico, and she stays true to her roots. Making their famous Lentil-Berry, Margie, and Biff sandwiches, as well as the Vegan dishes they’re so well-known for.

There’s a new truck in town. Name: Philly Flattop. Game: “Authentic Philly Cheesesteaks“. We spotted it this past Tuesday at Larkinville, big, blue and new. According to Twitter, Blue Lantern Lounge’s second food truck made it’s official debut at Kerfuffel at Canalside on July 26, 2014.

My best bet is that we won’t see this truck on the streets as often as other Buffalo Trucks, at least not yet. Blue Lantern’s first food truck venture, “da Blue” is rarely on the road, open for the public. From what I can tell, they tend to stick to catering. (I could be wrong.) Update: Blue Lantern Lounge has sold “da Blue” food truck. They have reported that Philly Flattop WILL be out and about. 

According to their calendar, Philly Flattop plans to be at Larkin Square again for the last three Food Truck Tuesdays in August. Plus, they have a few other appearances planned here and there like Concert for a Cure at Canalside.

We have yet to taste a Philly Cheesesteak from the new blue truck let alone lay eyes on a photo of one, so we can’t report on the authenticity of their product just yet. However, I can assure you that our in-house, self-proclaimed cheesesteak expert is on it and will report back soon.

With food trucks prospering as legitimate local food options in Western New York, it was a matter of time before the trend extended to the area’s biggest university.

The 30-foot-long Big Blue food truck, the product of the University at Buffalo’s affiliated Campus Dining and Shops, will begin service at noon before the Bulls’ men’s football game against Duquesne, which kicks off at 3:30 p.m. Saturday in UB Stadium.

Big Blue — not to be confused with former Blue Lantern food truck da Blue — will park in front of Bissell Hall on North Campus [labeled by the red "Here" on the map below] before the football game, offering lunch for those tailgating or enjoying the Easton Corbin country concert at 1:30 p.m. in Stampede Square.

According to the UB press release, Big Blue is no hastily constructed food truck — Campus Dining’s executive director, Jeff Brady, and his colleagues visited more than 140 food trucks in the Northeast for insight into owning and operating a food truck, then designed and executed the mobile-food vehicle with the aid of focus groups comprising UB students, faculty and staff.

Previously, independent Buffalo food trucks occasionally served lunch at local colleges — one of the more aggressive attempts was Lloyd Taco Trucks dedicating a truck from its fleet to Buffalo State College while school was in session.

The cost of Big Blue’s menu items will range between $4 and $8, while cash, credit and UB dining cards will be accepted. Although official operating hours won’t be announced until the truck’s debut tomorrow, the release explained that Big Blue will serve North Campus on Mondays, Wednesdays and Fridays, and South Campus on Tuesdays and Thursdays during the day– as well as Thursday, Friday and Saturday nights. The truck is slated to appear at UB’s major campus events, as well.

The varieties of grilled cheese and macaroni and cheese are expected to rotate as the semester unfolds, in addition to possible changes in Teppanyaki, which refers to the Japanese-influenced cuisine broiled on a steel or iron grill.

If Big Blue is a roaring success, a smaller truck called Baby Blue will follow in its tire-tracks.

In the meantime, if you see a massive blue truck lumbering down Main Street, honk at the behemoth that’s reshaping the image of local campus dining.

Buffalo, NY: Food truck operators prep for busy season

BUFFALO, N.Y. (WIVB) – Western New Yorkers love their outdoor food festivals in the summertime. That might be one reason why Larkin Square’s “Food Truck Tuesday” has evolved into a treasured weekly tradition, less than two years after its original launch.

The first event of 2015 takes place at the square located behind the Larkin Exchange Building tonight, May 5th, with a Cinco de Mayo theme.

This year, the thousands of visitors each week will have access to cuisine from more than forty trucks throughout the course of the season, some traveling from as far as Rochester to participate. The weekly event makes Tuesdays the busiest day for the staff on board each truck. Amanda Amico of Amy’s Truck is ready for busy season to start up again. Her truck will be debuting a new logo and design at tonight’s event.

“We thought we would bring a fresh new look for the season,” Amico said as she described the vehicle’s new wrap. “We just really wanted to kick it up a notch.”

Food Truck Tuesdays run through the end of October, with live music and a local market taking place at each one. Parking and admission are free. You can find a full schedule of events here.

Buffalo, NY: Food Truck Tuesday Kicks Off at Larkin Square

BUFFALO, N.Y. — Tuesday night marked the beginning of the six-month run of Food Truck Tuesdays in Buffalo.  In its third year, the event continues to grow by leaps and bounds.

“We started in 2013 with five trucks, and then the next week, there were six, seven and eight,” said Leslie Zemsky, Larkin Square Director of Fun.

Fast forward to today, there are 30 trucks at the event participating each week, with a total of 45 trucks in the rotation, some coming from as far away as Batavia and Rochester.

Black Market Food Truck was one of the original trucks at Food Truck Tuesday in 2013.

Owner Michael Dimmer said the event is fun and provides his business with great exposure.

“This event, hands down, I think has changed the food truck scene in the city of Buffalo,” said Dimmer. “It’s changed the way that a lot of food trucks operate, and it’s changed the success rate of pretty much everyone here that works here tremendously.”

Dimmer said Black Market’s success has driven them to open a brick-and-mortar location in Buffalo. It’s called Marble and Rye, and it is set to open in six weeks. It will feature a whiskey bar and a different menu from the truck, which will continue to run full-time.

“It’s not so much gourmet deli, more small plate, shared plate and woodfire oven stuff,” said Dimmer.

Two other trucks, Mikey Dee’s and Roaming Buffalo, are teaming up for their own brick and mortar operation. The joint effort will open in on June 12 in Elma and will be called Roaming Dee’s.

“I’m just hoping that we can really turn this restaurant/bar into a place that people want to be, a fun place for the food trucks, great food, great menu, cheap beers and just a good time,” said Mike DiJoseph, Mikey Dee’s Catering Owner/Operator.

Thai Me Up Food Truck said it hopes to open its brick and mortar in the next month in Lancaster called the Water Lily Cafe.

The owner of Rochester’s Macarollin’ truck said he is in the final stages of opening a location in Niagara Falls.

And Lloyd Taco Truck is putting the finishing touches on its new restaurant in North Buffalo.

“I think for a restaurant, it’s a way to have an extension of their brand, and then for the food trucks that open a restaurant after, it’s a way for them to get started in an affordable way, test out their recipes and then go on,” said Zemsky.

It’s a recipe in Buffalo that appears to be working.

Buffalo, NY: Food Truck Tuesdays Primer, including parking!

The first Food Truck Tuesday of the season was very well attended. We thought it would be helpful to provide a Food Truck Tuesdays Primer, with an emphasis on “where to park?”.
The continued success of this event, including free parking (thanks to First Niagara and Independent Health) depends on everyone being respectful of the surrounding neighborhood and other cars in the parking lots. We encourage you to not park on residential streets, please park in our many free surface lots plus our ramp.

Food Truck Tuesdays for 2015 are on through the end of October from 5-8pm

For the early hour attenders, the first lot to head to is our events lot off Hydraulic Street between Seneca and Exchange Street.
The ramp will be opened by 5:45 pm. Please park in any available spot inside the ramp, including ones marked reserved.You are also welcome to park in any of our surface parking lots along Exchange St. between Van Rensselaer and Smith Street. Once inside the lots, please be careful to not block other cars in with your parking. The speed limit in the ramp and lots is 5 mph. Please be friendly to our staff helping in the lots. We are proud to present one of the only events in the region with free parking. Please do your part by being patient on busy nights.Handicap spots may be found in the ramp on the ground, second and roof levels (elevators available). We are also designating a lot across the street from Larkin Square, on the north east corner of Emslie and Seneca St. as a handicap lot. An attendant will be in this lot to be sure guests who require a handicap space can find one.A few other helpful Food Truck Tuesdays tips:
  • You are welcome to bring a folding chair to the event.No coolers, no outside alcohol, other beverages or food may be brought into Larkin Square.Alcohol may not be consumed in our parking lots or on the streets.There is no smoking in Larkin Square, including e-cigarettes.

    Restrooms are located behind the Filling Station and in the plaza area behind the Boardwalk. There are also restrooms in the Hydraulic Hearth, and at Flying Bison.

    The Hydraulic Hearth Restaurant & Brewery (across the street from Larkin Square) invites you to bring Food Truck purchased food into their restaurant to enjoy. They have a wide selection of beverages, including an on premises Community Beer Works Satellite Brewery.

    Flying Bison Brewery open and hosting a few food Trucks on Tuesday nights as well.

BUFFALO, N.Y. — A new food truck has hit the streets of the Queen City with a special mission. The Bread of Heaven food truck aims to feed the hungry for free.

Its first-ever stop was outside the Martha Mitchell Center in the Langfield Housing Development Monday afternoon. True Bethel Baptist Church on East Ferry Street purchased and custom-built the truck.

“What is happening now is word of mouth,” said True Bethel Baptist Church Pastor Darius Pridgen. “We wanted the community to be involved, the community to advertise, the community to bring people out. So by doing that we are able to connect with people who we might not have had the chance to connect with if we were just in church.”

The truck will make the rounds three days a week during the summer and will use social media to promote where it can be found.

It’s not the bustling days of yesteryear but there is a new contemporary climate to the daytime streets of downtown Buffalo and this summer brings a host of activities. The farmer’s market vendors that most people wait until the weekend to line up for are available Tuesday and Thursdays along Main Street. The dozens of vendors are already offering up great local produce, flower baskets, and even great cheeses and kettle corn.

Food trucks load into Niagara Square every Thursday afternoon to feed the masses of office workers and visitors. Encircled like a grouping of covered wagons, the varying food trucks offer mid-day sustenance to those looking to take a break on one of the nearby benches or under a shady tree.

The M&T Plaza Lunchtime Concert Series is underway with great and varying acts in front of the Main Street M&T Bank location. The free performances run noon to 1pm, Mon through Fri until the end of August. This year’s performers will include the Buffalo Philharmonic Orchestra on July 7, Big Wheelie and the Hubcaps on July 15, and McCarthyizm on July 24. The range is wider than this article would allow and the listing can be found in local branches.

The Erie Basin Marina is still a popular walking area and beautifully scenic with boats drifting in and out of the waterview. Stroll over to the Buffalo Naval and Military Park where you can tour the ships and museum and stop at the Liberty Hound for a great lunch. The nearby Canalside is bustling with activity every day with free lawn and table games and kayak and water bike rentals.

For the historically minded, tours of city hall are given each day, Monday through Friday, at noon. Meet in the lobby for this detailed look into one of the most interesting building interiors in Buffalo.

If you are looking for a bit of style while downtown be sure to stop by the summer shops at the Queen City Pop Up Shop area, located at 653 Main St. While the shops won’t be there long they are presently packed with unique clothing, accessories, gift items and housewares. Vendors include Yar Mo’s Muse, Ginametrical, and MMW Style Studio. Men will love Survival of the Gear, specializing in outdoor sports items. Live and Love Events is also on hand to help you with your event planning needs.

While the brick and mortar restaurants and shops are still active – the waves of food vendors, merchants, and musicians along with other entertainment offers a fresh energy to the up and coming City of Good Neighbors. Take a quick bus trip with the kids for something new and different to do on a weekday afternoon.

On the fifth anniversary of Lloyd, the Buffalo taco truck sensation, let’s take a moment to appreciate what Lloyd hath wrought.

Five years ago, the street food of Buffalo was a tube-meat monoculture.

Peter Cimino and Chris Dorsaneo wanted to start a taco truck. People told them it was impossible to make a business of it, and the City of Buffalo told them it was not legal. They were too stubborn to listen. Their fans loved them for that, as well as their tacos.

So much so that when the truck’s engine failed, they appealed to their fans for repair money, rewarding them with more tacos. The Lloyd llove started to spread.

They found allies who helped them push through a food truck law that works. That led to a explosion of street food opportunities for Western New York eaters. Roast pork, sausage, vegan delights, Thai food, fried fish and Chef’s chicken parm are just the beginning. Food Truck Tuesday at Larkin Square can only hold about 30 food trucks, and it is full each week, with more trucks waiting to get their turn.

Now Lloyd continues working on its much-anticipated restaurant at 1503 Hertel Ave., originally expected to open in the spring. “We will be open as soon as possible,” Dorsaneo said Friday. “We have a lot of great things planned that have not been seen before in Buffalo. Have faith in Lloyd.”

The gates are still closed, but at its fifth anniversary party tonight at Artisan Kitchens & Baths, 200 Amherst St., a few peeks at the Wonka-esque taco delights to come will be available. Admission is $15.

Debuting are Lloyd’s takes on Nashville’s fiery fried chicken and Philadelphia’s roast pork with bitter greens sandwich, classic American tastes guest starring in a Lloyd tortilla. The details:

Tennessee Hot Chicken: double-dredged buttermilk fried chicken, cayenne pepper bath, cole slaw, dill pickles

Luca Brasi: Garlic roast pork, broccoli rabe, toasted pine nuts, Parmesan crumble

Vegetarian guest star: mushroom Philly, with seared mushroom medley, sautéed peppers and onions, cheese dip

Buffalo, NY: Just Pizza food truck joins Buffalo fleet

Just Pizza has gotten into the food truck business.

The fully equipped pizza-and-wings kitchen on wheels started selling food earlier this month.

The truck is “a staple” at Canalside’s Thursday and weekend concert venue, Larkinville, private and corporate events, and “will soon have a presence in Buffalo’s growing Medical Corridor,” said company vice president Mark D. Campanella.

Just Pizza has served events from a trailer for several years, Campanella said. The truck – equipped with Blodgett double-deck ovens, two deep fryers and a char-pit grill – went into service Aug. 6 at a Canalside concert.

In 2011, before Buffalo passed its law regulating food trucks, Just Pizza was leery of what food trucks could mean without adequate regulation.

“This could open the door for cowboys to start coming in this town,” Campanella said at the time. “It could be just a scene out of the wild, wild west.”

The food truck law that Buffalo put into effect in 2012 made sure that didn’t happen, Campanella said. From what he’s observed, food truck operators have done “a great job in working both the streets they serve as well as the venues they participate in,” he said.

East Aurora, NY: Food Trucks N Fire Trucks planned for Sept. 6 in East Aurora

The second annual Food Trucks N Fire Trucks is heading to East Aurora Firemen’s Field from 11 a.m. to 9 p.m. on Sept. 6.

Larry Roland, a volunteer for the East Aurora Fire Department, which is host of the event, is in his second year as master of festivities. He said 12 food trucks will be on hand, along with the ever-present fire trucks and firefighters entertaining questions from the crowd.

Roland served up a sammple of the event’s menu: craft beers, limburger-and-onions, clams, and both Manhattan and New England clam chowder, kettle corn, a Chinese auction, 50/50s, two appearances of the world-famous candy canon and musical entertainment from Krossfire and In Between.

Firemen’s Field is at 419 Pine St. Extension. Directions and a map are available at www.eastaurorafire.com.

The final Food Truck Thursday of 2015 in Niagara Square was celebrated Thursday with food provided by some dozen food trucks. There also was music by Michael DeSanto.

The trucks were invited to the square this summer as a pilot project and Mayor Byron W. Brown declared the pilot a success

The food trucks are interested in returning next year, possibly more than once a week, Brown said. He said the city will consider the request.

The mayor said the food trucks did not hurt the business of nearby restaurants and the lunchtime customers enjoyed having the extra options available.

“Food, people, and music. It doesn’t get better than that,” Brown said when the lunch crowds arrived Thursday.

A food truck that will serve Indonesian street food and all-American fare with roots in Buffalo, New York, will open Sunday on Flynn Avenue near Oakledge Park in Burlington.

White Buffalo Food Company is housed in a 27-foot former bread delivery truck that Chris Smith and his business partners found on Craigslist and bought in Rhode Island. After its run as a bread truck, it was a food truck called Clam Jammers.

Smith and his partners, wife Tara Smith and friend Keith Gadwah, spent much of the summer behind the old bus station on Pine Street cleaning and fixing the truck and its equipment.

On a 95-degree day, with the sun baking the rig from both sides, the White Buffalo crew peeled away the sticker that covered the truck in Clam Jammers’ words and logos.

“Clam Jammer, that’ll fly down in Rhode Island, with tons of seafood restaurants,” Smith said. “We get it back to Vermont, we start getting all these looks.”

People think with a food truck you “roll it and go,” Smith said, adding that’s not the way it works.

“No, man, no,” he said.

The truck was converted from a bread truck to a food truck in 2010. It operated for a couple of years, before sitting idle for three until its recent purchase.

Smith is pretty sure the last time someone drove the truck, they rode around without covering the fryolaters. Two inches of vegetable oil pooled in a corner of the truck. Paper plates were stewing in the slick.

The truck is now running well, “gleaming and immaculate,” Smith said. He estimates the cost of the truck, plus repairs, cleaning and getting it in reliable shape at $45,000.

White Buffalo menu will include food from Tara Smith’s native Indonesia, including steamed buns with homemade sweet chili-garlic sauce. From Buffalo comes an “American classic” called beef on weck, Smith said.

That’s short for kummelweck, a Kaiser roll sprinkled with kosher salt and caraway seek. The roll is filled with roast beef in jus with horseradish.

“It’s real simple,” Smith said. “But amazing.”

White Buffalo is a return to the food business for Smith, who cooked at restaurants — including two in Stowe — in high school and college But he and his wife owe their culinary skills to their mothers and grandmothers, Smith said.

The couple met in a Zumba class. They got together over the food at Zumba potlucks.
